Head work = port polish, bigger valves, cams, valve springs, injectors.
Bottom end work = knife edge, balance, bracing the caps, pistons, rods.
how much do you want to spend. What do you want the car to do? Ask yourself this before you start an engine build up, and stick to what you want. My engine cost approx 8000 dollars, and I don't regret a penny of it. However it also took me almost 2 years to complete.
